Palak Chorchori is an ideal dish especially for vegetarians. Moreover the presence of nutritious elements makes it quite an exquisite combination of taste & health.
Ingredients for making Palak Chorchori:
- Spinach (palak) : 2 bunches (chopped)
- Pumpkin : 100 gm (diced)
- Flat beans : 100 gm (chopped)
- Potato : 1 piece (boiled & diced)
- Bori : 10 pieces
- Brinjal : 100 gm (diced)
- Dry red chilli : 1 piece
- Five spices : ½ tsp
- Mustard paste : 1 tbsp
- Oil : 4 tbsp
- Salt : to taste
- Sugar : 1 tsp
- Ginger paste : 1 tsp
- Turmeric powder : 1 tsp
Procedure for preparing Palak Chorchori:
- Heat 2 tbsp of oil in a pan.
- Fry the bori till golden brown & keep aside.
- Add 2 tbsp oil to the rest of the oil.
- Add dry red chilli, five spices. Stir.
- Add pumpkin, flat beans, brinjal & stir fry till golden brown.
- Add salt, turmeric powder, sugar & stir well.
- Add ginger paste, spinach, potato & cover with a lid. Cook till the vegetables become tender.
- Uncover. Add mustard paste & stir till dry.
- Remove from heat & serve hot with steamed rice.
