Hot & Sour Soup is delicious & flavour-packed soup. It is cooked with soya sauce, vinegar, chilli oil, Chinese mushroom & bamboo shoots.
Ingredients for preparing Hot & Sour Soup:
- Chicken Breast : 1 piece (boiled & shredded)
- Vegetable oil : 1 tbsp
- Chinese Mushroom : 1 cup (shredded)
- Bamboo Shoots : 1 cup (shredded)
- Cabbage : ½ cup (shredded)
- Carrot : 3 tbsp (shredded)
- Spring onion : 1 bunch (finely chopped)
- Chicken Stock : 5 cups
- Soya Sauce : 2 tsp
- Vinegar : 3 tbsp
- Black Pepper : 1 tsp
- Salt : to taste
- Sugar : ½ tbsp
- Ajinomoto : ½ tsp
- Cornflour : 4 tbsp
- Egg : 1 piece (beaten)
- Sesame oil : 1 tsp
- Chilli powder : 1 tsp
Procedure for preparing Hot & Sour Soup:
- Heat oil in a large pan. Add all vegetables, mushroom & sauté for 2 minutes.
- Boil chicken pieces with 6 cups of water & ½ tsp of salt.
- Strain & shredded the chicken & separate the stock.
- Add stock with vegetables & allow it to boil for 5 minutes.
- Reduce the heat, now add soya sauce, vinegar, salt, pepper, sugar, ajinomoto & chicken pieces.
- Add spring onions.
- Mix cornflour with ½ cup of water.
- Add cornflour with soup. Bring to boil. Pour beaten egg. Stir the soup to get the shreds of egg.
- Remove from heat.
- Heat seasame oil in another pan. Add the red chilli powder. Stir & remove immediately.
- Add this chilli oil to the soup & cover for a few minutes.
- Uncover & serve hot.
