Carrot cake is a delicious and nutricious dessert that’s easy to make at home, featuring minimal artificial additives. Grated carrot adds natural sweetness and moisture, along with essential vitamins.
Ingredients for Carrot Cake Recipe
- Maida/All-purpose flour – 2 cups
- Eggs – 4 large
- White Sugar – 1½ cups (powdered)
- Vanilla essence – 1 tsp
- Cardamom powder – 1 tsp
- Baking powder – 1½ tsp
- Salt – 1 pinch
- Carrot – 3½ cups (grated)
- Oil – 1¼ cup
- Cashew – ½ cup (chopped)
For the icing
- Whipping cream – 1½ cup
- Icing sugar – ½ cup
- Vanilla essence – ½ tsp
Procedure for preparing Carrot Cake
Beat the eggs in slow speed till they become frothy, gradually the powdered sugar to it. Then slowly add maida/all-purpose flour to it while beating, after it is mixed properly, add cardamom powder, baking powder, salt and vanilla essence and mix well again. Now add the oil and mix well, when done, add the grated carrot & chopped cashew and fold in slowly to mix well with the help of a spatula.
Pre-heat the oven, and bake at 160°C for 45-50 minutes.
For the icing add all the ingredients and whip till it stiff peaks are formed. Slice the cake in 2 halves horizontally to make 2 layers, apply half of the icing on 1 layer and press the other layer on top of it, and apply the remaining icing on the top layer and decorate it with cut designs of carrot.
