Navratan pulao recipe attempts to bring the exotic authentic nawabi cuisine to your table. It is made with rice vegetables & Indian spices.
Ingredients for preparing Navaratan Polao:
- Basmati Rice : 2 cups
- Milk : 1 cup
- Carrot : 100 gm
- Beans : 100 gm
- Peas : 100 gm
- Paneer : 100 gm
- Cashew : 50 gm
- Raisin : 50 gm
- Mace powder : 1 tsp
- Nutmeg powder : 1 tsp
- Sugar : 2 tbsp
- Salt : to taste
- Potato : 1 piece
- Bell pepper : 1 cup (red, yellow, green)
- Cauliflower : 1 cup
- Ghee : 2 tbsp
- Refined oil : 2 tbsp
- Whole cardamom : 2 pieces
- Cinnamon : 1â€
- Clove : 2 pieces
- Bay leaves : 1 piece
- Black Pepper : 2 tsp
Procedure for preparing Navaratan Polao:
- Wash & soak rice for 1 hour.
- Cut all vegetables into square pieces.
- Boil potatoes & blanch other vegetables in salt & keep aside.
- Half boil rice with water & whole pepper. Strain. Let it dry.
- Mix salt & sugar with rice.
- Heat oil in a heavy bottom large vessel.
- Fry paneer & take out. Keep aside.
- In the rest of the oil add whole cardamom, cinnamon, clove & bay leaves.
- Allow to splutter. Add cashew, raisin & stir well.
- Add all the vegetables, bell peppers. Stir well.
- Add boiled rice. Mix well.
- Add milk, mace, nutmeg powder, paneer & ghee. Cover & cook for 10 minutes in low flame.
- Remove from heat & serve hot.
