Kovaikka or Ivy gourd thoran (stir fried with grated coconut) is a very popular type of South Indian side dish. Kovaikka is good for diabetics due to it’s low glycemic index.
Kovaikka is rich in minerals, Vitamin B complex and also is very low calorie.
Ingredients for Kovaikka Thoran Recipe
- Kovaikkai/Ivy Gourd/Kundru – 250 gms(sliced in thin circles)
- Grated Coconut – 1/2 cup
- Curry leaves – 1 strand
- Mustard seeds – 1/2 tsp
- Salt – to taste
- Turmeric powder – 1/4 tsp
- Oil – 1 tsp
Procedure for preparing Kovaikka Thoran Recipe
Heat oil in a pan/kadhai and splutter mustard seeds in it. Now add the curry leaves and the slit green chillies, Sauté for a minute and then add the kovaika to it and mix well. Fry for 2 minutes then on low heat let it cook for 5 minutes with a lid.
Meanwhile mix the turmeric powder and salt to the grated coconut and keep aside.
Now check if kovaika is cooked well.
Once cooked add the grated coconut, mix well and then check seasoning.
Remove from fire. It’s best served with steamed rice and gravy curry like Sambar, Rasam, or Dal.
