Mint Aloo is a quick & simple veg recipe. The stunning flavour of mint (pudina) leaves & spices makes this dish an irresistible treat.
Ingredients for preparing Mint Aloo:
- Potatoes : 10 pieces (boiled & peeled)
- Mint leaves : 2 tbsp (chopped)
- Coriander leaves : 2 tbsp (chopped)
- Roasted cumin seed : 1 tsp (powdered)
- Ginger paste : 1 tbsp
- Sugar : 1 tsp
- Red Chilli powder : 1 tsp
- Salt : to taste
- Oil : 4 tbsp
- Green chilli : 2 pieces (chopped)
- Whole cumin seed : 1 tsp
- Bay leaves : 1 piece
- Turmeric powder : ½ tsp
Procedure for prepare Mint Aloo:
- Dice boiled potatoes.
- Heat oil in a pan. Add bay leaves & whole cumin seed. Stir till light brown.
- Add potatoes & fry.
- Add sugar, red chilli powder, ginger paste, cumin seed powder, turmeric powder. Stir in low flame.
- Add ½ cup of water bit by bit & stir till it thickens.
- Before removing from heat, add mint leaves & coriander leaves & sauté for a minute.
- Serve hot with parathas.
