Jalebi is a sweet popular in India. It is made by deep frying batter in pretzel or circular shapes, which are then soaked in sugar syrup. In India Jalebi is served as the Celebration Sweet of India.
Makes – 15 jalebis
Ingredients for Jalebi Recipe
- Maida/all purpose flour – 1 cup
- Besan/gram flour – 2 tsp
- Sugar – 1 tsp
- Ghee – 1 tsp
- Baking Soda – 3 small pinches
- Yellow colour – a few drops (optional)
- Saffron strands – a few
- Sugar – 1 cup
- Water – 1 cup
- Lemon juice – ¼ tsp
- Cardamom powder – ¼ tsp
- Ghee/ oil – for frying the jalebis
- Rose water – a few drops
Procedure for preparing Jalebi Recipe
In a bowl mix maida, sugar, 1 tsp ghee, yellow colour(optional) and besan and then add the baking soda and make a smooth and thick batter by adding some water.
Now pour this mix in a ketchup bottle or piping bag or a thick cloth with a hole in the centre.
Meanwhile in a pan make sugar syrup by melting sugar in water till you get 2 string consistency and then add saffron, cardamom powder and lemon juice ad mix well.
Once the syrup cools a bit add a few drops of rose water.
Heat ghee/oil in a kadhai and then make circles inside out by squeezing the batter from the ketchup bottle. Fry the jalebis till golden brown and then drop them directly into the warm sugar syrup.
Keep the jalebis in the sugar syrup for 1-2 minutes and then take them out and serve immediately.
