Begunee (Brinjal Fritters) Recipe

Begunee (Brinjal Fritters) Recipe

A spicy & tasty Begunee recipe is very well-known & simple to cook. It is best served as a tea time snack or as a side dish with khichdi or polao.

Ingredients for preparing Begunee:

  • Brinjal/Eggplant : 1 piece (finely sliced)
  • Gram flour : 100 gm
  • Rice flour : 50 gm
  • Black cumin seed : 1 tsp
  • Turmeric powder : ½ tsp
  • Red chilli powder : 1 tsp
  • Salt : to taste
  • Black salt : ½ tsp
  • Mustard oil : 200 gm
  • Sodium-bi-carbonate : 1 pinch

Procedure for preparing Begunee:

  • Wash brinjal slices & rub with ½ tsp salt. Keep aside.
  • Make a thick batter with gram flour, rice powder, sodium-bi-carbonate, black cumin seeds, turmeric powder, red chilli powder, salt & water.
  • Heat oil in a wok.
  • Take 1 slice of brinjal. Dip into the thick batter & deep fry in the hot oil.
  • Take out fried brinjal (begunee).
  • In this same procedure fry all the brinjal slices.
  • Sprinkle black salt. Serve hot.
