A spicy & tasty Begunee recipe is very well-known & simple to cook. It is best served as a tea time snack or as a side dish with khichdi or polao.
Ingredients for preparing Begunee:
- Brinjal/Eggplant : 1 piece (finely sliced)
- Gram flour : 100 gm
- Rice flour : 50 gm
- Black cumin seed : 1 tsp
- Turmeric powder : ½ tsp
- Red chilli powder : 1 tsp
- Salt : to taste
- Black salt : ½ tsp
- Mustard oil : 200 gm
- Sodium-bi-carbonate : 1 pinch
Procedure for preparing Begunee:
- Wash brinjal slices & rub with ½ tsp salt. Keep aside.
- Make a thick batter with gram flour, rice powder, sodium-bi-carbonate, black cumin seeds, turmeric powder, red chilli powder, salt & water.
- Heat oil in a wok.
- Take 1 slice of brinjal. Dip into the thick batter & deep fry in the hot oil.
- Take out fried brinjal (begunee).
- In this same procedure fry all the brinjal slices.
- Sprinkle black salt. Serve hot.
