Hilsa Polao is a Bengali cuisine. Hilsa, a favourite to almost all Bengalis, is heightened with the combination of aromatic polao.
Ingredients for preparing Hilsa Polao:
- Hilsa : 4 pieces
- Basmati rice : 250 gm
- Ghee : 4 tbsp
- Oil : 4 tbsp
- Raisin : 25 gm
- Bay leaves : 2 pieces
- Whole cardamom : 2 pieces
- Cinnamon : 1 piece
- Clove : 2 pieces
- Nutmeg powder : ½ tsp
- Mace powder : ½ tsp
- Saffron : 1 pinch
- Hot milk : ½ cup
- Salt : to taste
Procedure for preparing Hilsa Polao:
- Soak rice & strain.
- Keep it aside for 1 hour.
- Wash the fish & mix salt & light fry.
- In a heavy bottom vessel, add ghee, cardamom, cinnamon, clove, bay leaves, raisin & stir well.
- Add soaked rice & stir.
- Add salt & pour water double the rice & cook till it becomes tender.
- Add saffron to milk & mix it with rice.
- Now add rest of the nutmeg & mace powder.
- Arrange fish over rice & cover the vessel.
- Seal the cover using dough.
- Place the vessel on a tawa over oven.
- Cook for 20 minutes.
- Serve hot.
