Hilsa Polao Recipe

Hilsa Polao is a Bengali cuisine. Hilsa, a favourite to almost all Bengalis, is heightened with the combination of aromatic polao.

Ingredients for preparing Hilsa Polao:

  • Hilsa : 4 pieces
  • Basmati rice : 250 gm
  • Ghee : 4 tbsp
  • Oil : 4 tbsp
  • Raisin : 25 gm
  • Bay leaves : 2 pieces
  • Whole cardamom : 2 pieces
  • Cinnamon : 1 piece
  • Clove : 2 pieces
  • Nutmeg powder : ½ tsp
  • Mace powder : ½ tsp
  • Saffron : 1 pinch
  • Hot milk : ½ cup
  • Salt : to taste

Procedure for preparing Hilsa Polao:

  • Soak rice & strain.
  • Keep it aside for 1 hour.
  • Wash the fish & mix salt & light fry.
  • In a heavy bottom vessel, add ghee, cardamom, cinnamon, clove, bay leaves, raisin & stir well.
  • Add soaked rice & stir.
  • Add salt & pour water double the rice & cook till it becomes tender.
  • Add saffron to milk & mix it with rice.
  • Now add rest of the nutmeg & mace powder.
  • Arrange fish over rice & cover the vessel.
  • Seal the cover using dough.
  • Place the vessel on a tawa over oven.
  • Cook for 20 minutes.
  • Serve hot.
