Palak Chorchori Recipe

Palak Chorchori is an ideal dish especially for vegetarians. Moreover the presence of nutritious elements makes it quite an exquisite combination of taste & health.

Ingredients for making Palak Chorchori:

  • Spinach (palak) : 2 bunches (chopped)
  • Pumpkin : 100 gm (diced)
  • Flat beans : 100 gm (chopped)
  • Potato : 1 piece (boiled & diced)
  • Bori : 10 pieces
  • Brinjal : 100 gm (diced)
  • Dry red chilli : 1 piece
  • Five spices : ½ tsp
  • Mustard paste : 1 tbsp
  • Oil : 4 tbsp
  • Salt : to taste
  • Sugar : 1 tsp
  • Ginger paste : 1 tsp
  • Turmeric powder : 1 tsp

Procedure for preparing Palak Chorchori:

  • Heat 2 tbsp of oil in a pan.
  • Fry the bori till golden brown & keep aside.
  • Add 2 tbsp oil to the rest of the oil.
  • Add dry red chilli, five spices. Stir.
  • Add pumpkin, flat beans, brinjal & stir fry till golden brown.
  • Add salt, turmeric powder, sugar & stir well.
  • Add ginger paste, spinach, potato & cover with a lid. Cook till the vegetables become tender.
  • Uncover. Add mustard paste & stir till dry.
  • Remove from heat & serve hot with steamed rice.
