Mutton Rogan Josh Recipe

Mutton Rogan Josh is a fine delicacy from Kashmir. In this recipe mutton is prepared with yogurt, spices, kashmiri red chilli powder.

Ingredients for preparing Mutton Rogan Josh:

  • Mutton : 500 gm
  • Ghee : 100 gm
  • Onion : 4 pieces (sliced)
  • Yogurt : 50 gm
  • Ginger paste : 1 tsp
  • Garlic paste : 1 tsp
  • Bay leaves : 2 pieces
  • Whole cinnamon : 1”
  • Whole clove : 2 pieces
  • Whole cardamom : 2 pieces
  • Garam masala powder : 2 tsp
  • Cashew nut paste : 2 tsp
  • Cumin powder : ½ tsp
  • Kashmiri chilli powder : 1 tsp
  • Tomato puree : 2 tbsp

 

Procedure for preparing Mutton Rogan Josh:

  • Heat ghee in a pan.
  • Add bay leaves, whole cardamom, clove, cinnamon & stir.
  • Add onion & sauté for a while.
  • Add ginger garlic paste & mutton & sauté.
  • Add yogurt, tomato puree, kashmiri chilli powder, cumin powder & stir well.
  • When oil releases add cashew paste & mix well.
  • Add 2 cups of water. Cover it.
  • When mutton becomes tender, spread garam masala powder & remove from the heat.
  • Serve hot with polao or Chapati.
