Mutton Rogan Josh is a fine delicacy from Kashmir. In this recipe mutton is prepared with yogurt, spices, kashmiri red chilli powder.
Ingredients for preparing Mutton Rogan Josh:
- Mutton : 500 gm
- Ghee : 100 gm
- Onion : 4 pieces (sliced)
- Yogurt : 50 gm
- Ginger paste : 1 tsp
- Garlic paste : 1 tsp
- Bay leaves : 2 pieces
- Whole cinnamon : 1â€
- Whole clove : 2 pieces
- Whole cardamom : 2 pieces
- Garam masala powder : 2 tsp
- Cashew nut paste : 2 tsp
- Cumin powder : ½ tsp
- Kashmiri chilli powder : 1 tsp
- Tomato puree : 2 tbsp
Procedure for preparing Mutton Rogan Josh:
- Heat ghee in a pan.
- Add bay leaves, whole cardamom, clove, cinnamon & stir.
- Add onion & sauté for a while.
- Add ginger garlic paste & mutton & sauté.
- Add yogurt, tomato puree, kashmiri chilli powder, cumin powder & stir well.
- When oil releases add cashew paste & mix well.
- Add 2 cups of water. Cover it.
- When mutton becomes tender, spread garam masala powder & remove from the heat.
- Serve hot with polao or Chapati.
