This delicious Mughlai dish gets its name Navratan (meaning nine gems) from the nine different vegetables and nuts used in it. This is best served with chapatti.
Ingredients for preparing Navaratan Korma:
- Carrot : 2 pieces (diced)
- Beans : 50 gm (diced)
- Green peas : ½ cup
- Cauliflower : 5 florets (diced)
- Tomato : 1 piece (diced)
- Cashew nut : 25 gm
- Raisin : 25 gm (soaked in ½ cup of water)
- Paneer : 100 gm (diced)
- Potato : 1 piece (diced)
- Ginger paste : 1 tbsp
- Whole cumin seed : 1 tsp
- Capsicum : 3 pieces (1 yellow, 1 red & 1 green) (diced)
- Salt : to taste
- Refined oil : 50 gm
- Sugar : 1 tsp
- Coriander leaves : 1 bunch (chopped)
- Cornflower : 1 tsp (delluted in ½ cup of water)
- Green Chilli Paste : 1 tbsp
- Bay leaves : 1 piece
- Pure ghee : 1 tbsp
- Garam masala powder : 1 tsp
Procedure for preparing Navaratan Korma:
- Heat 1 tbsp of oil.
- Add paneer. Stir in low flame till golden brown.
- Take out the paneer from the oil & soak in 1 cup of warm water with 1 pinch of salt.
- Heat a wok. Add rest of the oil.
- Add whole cumin seed, bay leaves. Let it to change its colour.
- Add carrot, beans, potato. Stir well in low flame.
- Add salt, sugar, ginger paste, green peas, chilli paste, tomatoes, cauliflower. Stir for more 3 minutes.
- Now add capsicum, cashew nut & 1 cup of water. Cover & cook until the vegetables tender.
- Add paneer, raisin, & coriander leaves. Stir & cook for 1 minute.
- Add cornflower, ghee, garam masala powder.
- Remove from heat & serve.
