Vattayappam is a traditional tea time snack of Kerala which is easy to prepare and is also considered a sweet dish which is prepared on Christmas and Easter. This dish is made of rice and coconut. It is a healthy dish as it is steamed so do try it.
Ingredients for Vattayappam Recipe
- Kachcha chawal/Raw rice/pachari– 250 gms
- Scraped coconut – 2 cups
- Sugar – 1 cup
- Toddy/Kallu(optional)- 1 cup
- Suji/rava – ½ cup
- Salt – to taste
- Yeast – ½ tsp
Procedure for preparing Vattayappam Recipe
Wash the kachcha chawal/raw rice/pachari.
Mix the rice, sugar,coconut and grind it in mixer.
In a pan boil suji/rava with a little water till it becomes creamy and then add it to the rice mix.
Add yeast to it and keep aside for 1 hour.
Grease a plate with oil and then pour this mix and steam it in a double boiler/idli vessel. Check if it’s done by inserting a safety pin in the center just like we do for cakes. If the pin comes out clean your vattayappam is ready.
Once done cut in pieces and serve.
Note : If you want you can garnish it with broken kaju/cashews and kismis/raisins or even cherry when the vattayappam is half steamed.
