Navaratan Polao Recipe

Navaratan Polao Recipe

Navratan pulao recipe attempts to bring the exotic authentic nawabi cuisine to your table. It is made with rice vegetables & Indian spices.

Ingredients for preparing Navaratan Polao:

  • Basmati Rice : 2 cups
  • Milk : 1 cup
  • Carrot : 100 gm
  • Beans : 100 gm
  • Peas : 100 gm
  • Paneer : 100 gm
  • Cashew : 50 gm
  • Raisin : 50 gm
  • Mace powder : 1 tsp
  • Nutmeg powder : 1 tsp
  • Sugar : 2 tbsp
  • Salt : to taste
  • Potato : 1 piece
  • Bell pepper : 1 cup (red, yellow, green)
  • Cauliflower : 1 cup
  • Ghee : 2 tbsp
  • Refined oil : 2 tbsp
  • Whole cardamom : 2 pieces
  • Cinnamon : 1”
  • Clove : 2 pieces
  • Bay leaves : 1 piece
  • Black Pepper : 2 tsp

Procedure for preparing Navaratan Polao:

  • Wash & soak rice for 1 hour.
  • Cut all vegetables into square pieces.
  • Boil potatoes & blanch other vegetables in salt & keep aside.
  • Half boil rice with water & whole pepper. Strain. Let it dry.
  • Mix salt & sugar with rice.
  • Heat oil in a heavy bottom large vessel.
  • Fry paneer & take out. Keep aside.
  • In the rest of the oil add whole cardamom, cinnamon, clove & bay leaves.
  • Allow to splutter. Add cashew, raisin & stir well.
  • Add all the vegetables, bell peppers. Stir well.
  • Add boiled rice. Mix well.
  • Add milk, mace, nutmeg powder, paneer & ghee. Cover & cook for 10 minutes in low flame.
  • Remove from heat & serve hot.
