Mango Kheer Recipe

Mango kheer is a delicious desert especially during the summers when you can get really yummy ripe mangoes. It is easy to prepare and it tastes awesome. It is a variety of rice kheer/payesh/payasam where the mango pulp is added to it and some saffron and a few drops of rose water is added for the essence, flavour and aroma.

Ingredients for Mango Kheer Recipe

  • Ripe Mangoes – 2
  • Rice(govind bhog rice) – 1 cup
  • Milk – 500 ml
  • Sugar – 1 cup
  • Cardamom– 5 (only seeds)
  • Rose water – ½ tsp
  • Kesar/ saffron – few strands
  • Water – 1 cup

Procedure for preparing Mango Kheer Recipe

Peel the ripe mangoes and cube them. keep aside a few cubes for garnishing and blend the remaining cubes in a blender to form a smooth paste of the pulp.

In a different cooking pan wash the rice and add 1 cup water and 1 cup milk to it and cook the rice . Once the rice is almost cooked add the sugar and remaining milk along with the cardamom seeds(crush the seeds coarsely before adding).

Once the sugar is melted stir the kheer continuously so that it doesn’t get burned .

Once you get the required consistency for the kheer add the saffron strands, mango pulp and rose water and mix well. Check the sweetness and remove from fire.

Serve hot or chilled garnished with mango cubes and few saffron strands.
