Egg Chicken Roll is very popular in Kolkata. It is very delicious & tasty as the combination of egg, chicken kebab, paratha & sauces. It is a very heavy dish. That’s why it is generally served as a full meal.
Ingredients for preparing Egg Chicken Roll:
- Egg : 5 pieces
- Onion : 2 pieces (chopped)
- Tomato sauce : 5 tbsp
- Chilli Sauce : 5 tbsp
- Green chilli : 4 pieces (chopped)
- Lemon juice : 3 tsp
- Salt : to taste
- Pepper : to taste
For the chicken filling:
- Boneless chicken : 200 gm
- Onion paste : 1 tsp
- Ginger paste : 1 tsp
- Garlic paste : 1 tsp
- Garam masala powder : 1 tsp
- Red chilli powder : 1 tsp
- Pepper powder : ½ tsp
- Salt : 1 tsp
- Lemon juice : 1 tsp
For the dough:
- Flour : 500 gm
- Salt : 1 tsp
- Oil : 1 tbsp
- Hot water : as required
Procedure for preparing Egg Chicken Roll:
For the filling:
- Wash & cut boneless chicken into bite size pieces.
- Take a bowl & mix onion paste, ginger paste, garlic paste, garam masala powder, red chilli powder, pepper powder, salt, lemon juice & chicken. Marinate for a couple of hour.
- Skew the chicken into skewer & grill into preheated oven at 200 degree temperature for 15 minutes.
- Keep aside the chicken kebab pieces.
For the dough:
- Make a soft dough with flour, salt, oil & hot water.
- Cover it with a wet cotton cloth & keep aside for an hour.
For the roll:
- Divide the dough into 5 balls.
- Roll out each ball using oil.
- Heat oil in non-stick pan.
- Shallow fry the parathas one by one & keep aside.
- Beat 1 egg with a pinch of salt.
- Heat 1 tbsp of oil in pan.
- Pour the beaten egg & place 1 paratha onto it & fry till golden brown.
- Take out & in this same procedure fry all the parathas.
- Now place a paratha on a plate. Put some chicken kebab pieces, onion, green chillies, tomato sauce, chilli sauce, lemon juice, salt & pepper into it.
- Roll it gently with a wrapping paper.
- Repeat the same procedure for remaining parathas.
- Serve hot.
