Ulli curry is a spicy vegetarian favourite of South Indian states Kerala & Tamil Nadu. Shallots help bring a different flavour to the curry & it is best served with rice.
Ingredients for Ulli Curry Recipe
- Onion shallots – 500 gms
- Green chillies – 5 (chopped)
- Grated coconut – ¼ coconut
- Coconut oil – 1 tbsp + 1 ½ tbsp + ½ tsp
- Coconut pieces – 1 tbsp (small pieces)
- Coriander powder – ¼ tsp
- Chilli powder – ¼ tsp
- Turmeric powder – 2 pinches
- Curry leaves – 2 strands
- Dry red chillies – 4
- Jaggery/ Gur – ¼ tsp
- Water – 1 ½ cup
- Tamarind – 1 pinch
Procedure for preparing Ulli Curry Recipe
Heat 1 tbsp coconut oil in a pan and add grated coconut and fry till it turns golden brown then add turmeric, coriander and chilli powder and sauté for 2 minutes.
In a mixer- grinder make a smooth paste of the above fried coconut and spices with very little water and keep aside.
Heat 1½ tbsp coconut oil and add onion shallots to it and fry till they turn transparent and then add green chilies and sauté till they become crispy. Remove from fire.
Make tamarind juice by smashing tamarind in water and squeezing the juice. Add the paste and jaggery to the tamarind juice and mix well.
Heat ½ tsp coconut oil and fry the coconut pieces till brown and add curry leaves and dry red chillies broken in halves and then add immediately the tamarind juice. Once it comes to boil add salt and add the fried onion and green chillies. Mix well.
Once you get the required consistency remove from fire.
