Rice Kheer Recipe

Rice kheer is a very traditional Indian desert and has many names such as kheer, rice pudding, kheeraj. There are lot of variations in making of Rice Kheer and so let us see the one I prefer.

Ingredients for preparing Rice Kheer

  • Rice – 1 cup
  • Sugar – 1 1/2 cup
  • Dry milk powder – 1 cup
  • Water – as required
  • Kaju – 6-7 pieces (chopped)

Procedure for preparing Rice Kheer

Wash rice and pressure cook with water for 10 minutes (or cook on low flame till rice tender and softens). Smash rice with the bottom of big spoon.

Add sugar. sauté for 5 minutes and then add dry milk powder, stirring continuously till the kheer reaches a desired consistency. Remove from heat.

Garnish with kaju. It can be served hot or cold.

Note that kheer served cold tastes less sweet than hot kheer and so you may need to add slightly more Sugar if planning to serve it cold.
