Kairiwali Bhindi Recipe

Kairiwali Bhindi is made is Okra slivers, raw mango, and a blend of fresh spices, which creates a healthy vegetarian dish with tangy taste.

Serves – 2 people
Preparation time – 10 minutes
Cooking time – 15 minutes

Ingredients for preparing Kairiwali Bhindi Recipe

  • Okra / Lady finger – 300 gms
  • Raw mango – 1 ( peeled, cored and cut in strips)
  • Fennel seeds – ½ tsp
  • Nigella seeds ( kalonji ) – ¼ tsp
  • Ginger – 1 tsp ( chopped )
  • Onion – 2 sliced finely
  • Chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Cumin powder – ½ tsp
  • A dash of lemon juice
  • Salt – to taste
  • Sugar – ½ tsp
  • Pepper – to taste
  • Oil – 3 tbsp

Procedure for preparing Kairiwali Bhindi

Wash & drain the okra, then trim & make very thin slices of each okra.

Heat oil in a pan and fry the ladyfingers till tender on low flame and keep aside.now in the pan heat some more oil and

fry the raw mango sprinkled with sugar till done and again keep aside.
Now again heat some oil and splutter the nigella and fennel seeds . add onions and ginger and fry for sometime. To this add coriander, chilli and cumin powder. mix well.Finally add the fried ladyfingers and mango and mix well along with pepper and lemon  juice. Check seasoning.

Serve hot with chapatis, roti, nan, parathas or even steamed rice.
