Tomato curry is a very easy and yet a traditional dish of Kerala prepared with tomatoes, coconut and curd. Whenever I’m in a hurry this recipe always helps me as little time is required to prepare this.
Ingredients for Tomato Curry recipe
- Tomato – 1 big
- Green chillies – 2-3
- Ginger – 1 inch
- Coconut(scraped) -half a cup
- Jeera(cumin seeds) – 1 tsp
- Turmeric powder – ½ tsp
- Beaten curd – 2-3 tsp
- Salt to taste
- Water
- Mustard – 1 tsp
- Curry leaves – a few
- Red chillies – 1 (broken into 2 pieces)
Procedure for preparing Tomato Curry
Boil the tomato with ginger, salt and green chillies and let it cook till tender .
While the tomato is cooking , make a paste of the scraped coconut,jeera and turmeric .
Add this coconut paste to the tomato and bring to boil. As soon as it starts boiling remove from fire and then to this add the beaten curd.
At last In a pan heat oil and add mustard and wait till it splutters , then to it add curry leavers and red chillies. Pour this over the tomato curry.
Simple and tasty tomato curry is ready.
