Dal is a common accompaniment in every Gujarati meal, it’s considered a delicacy by other, it’s best served with plain rice and a dollop of ghee.
Ingredients for preparing Gujarati Dal
- Arhar dal / tuvar dal – 250 gm
- Tomato – 2 pieces (chopped)
- Cumin seeds – ½ tsp
- Jaggery (gur) – 50 gm
- Tamarind (imli) – 2 tsp
- Garlic paste – 1 tsp
- Green chilly – 3 pieces (slit)
- Red chilly powder – ½ tsp
- Turmeric powder – ½ tsp
- Salt – to taste
- Oil – 1 tbsp
- Water – as required
- Coriander leaves– 1 cup (chopped)
For Tadka
- Oil – 1 tbsp
- Onion – 1 piece (chopped)
- Cumin seeds – 1 pinch
- Mustard seeds – 1pinch
- Garlic flake – 4 bulbs (chopped)
- Curry leaves – 6-7 leaves
Procedure for preparing Gujarati Dal
First soak tamarind and jaggery with water and keep aside.
Now boil dal with tomatoes, cumin seeds, garlic paste, green chillies, turmeric powder, red chilly powder, salt, water and oil ( by adding oil, dal water will not come out from cooker) in pressure cooker till dal gets tender and soft. With the help of big spoon smashed the dal or you can also use blender to make thick soup. .
Now add that soaked jaggery and tamarind (only water). Allow it to heat, stir well and add coriander leaves till you get desired consistency. Remove from heat and keep aside.
Heat oil, add onion, garlic, cumin seeds and mustard seeds, sauté it till onion become golden brown. Now add curry leaves, let it splutter and add that boiled dal, allow it to boil. Turn off fire.
Garnish with coriander and serve hot with rice, sabzi and papad.
