Mutton Do Pyaza Recipe

Mutton do Pyaza is a famous west Indian rich recipe. It brings out an authentic flavour of mutton, ghee & onion.

Ingredients for preparing Mutton do Payaza:

  • Mutton with bone : 500 gm
  • Ghee : 50 gm
  • Onion : 2(big-chopped)
  • Onion : 2(big-slice)
  • Coriander powder : 1 tsp
  • Cumin powder : 1 tsp
  • Green chilli : 2(slit)
  • whole dry red chilli :4 pieces
  • Fenugreek seeds : 2 tsp (grind)
  • Sugar : 1 tsp
  • Lemon juice : 2 tbsp
  • Turmeric powder : 1 tsp
  • Fresh coriander leaves : 2 tbsp (chopped)
  • Fresh mint leaves : 2 tbsp (chopped)
  • Salt : to taste
  • Garam masala powder : 1 tsp

Procedure for preparing Mutton do pyaza:

  • Sauté 1 tsp of ghee & green chillies (slit).
  • Drain & keep aside.
  • Grind red chilli & cumin seeds with 1 tsp lemon juice.
  • Marinate the mutton pieces with this paste for 4 hours.
  • Fry the chopped onion and then make a paste of it and keep aside.
  • Heat ghee in a pan.
  • Add Fenugreek seeds and mint leaves.
  • Stir well and add marinated mutton pieces.
  • Stir till it becomes dry.
  • Add Coriander powder, turmeric powder, salt.
  • Lower the heat.
  • Mix garam masala powder, fried green chillies, coriander leaves.
  • Cover and cook on low heat until mutton becomes tender.
  • Add onion paste.
  • Mix well.
  • Cover and cook more twenty minutes.
  • Sprinkle the remaining lemon juice.
  • Add sliced fried onion and serve hot.
