Bhetki Begam Bahar is a mouth watering recipe of Bengali cuisine. It goes well with plain rice or polao.
Ingredients for preparing Bhetki Begam Bahar :
- Bhetki fillet : 8 pieces
- Onion paste : 4 tbsp
- Garlic paste : 1 tsp
- Egg : 1 piece (beaten)
- Cornflour : 4 tbsp
- Coriander leaves : 1 bunch (chopped)
- Green chillies : 2 pieces (chopped)
- Kashmiri red chilli powder : 1 tsp
- Cumin seed powder : 1 tsp
- Lemon juice : 1 tsp
- Garam masala powder : 1 tsp
- Nutmeg power : ½ tsp
- Mace : ½ tsp
- Sugar : 1 tsp
- Ginger paste : 1 tsp
- Poppy seed paste : 1 tbsp
- Cashew nut paste : 1 tbsp
- Raisin paste : 1 tbsp
- Salt : to taste
- Black pepper powder : 1 tsp
- Oil : as required
Procedure for preparing Bhetki Begam Bahar :
- Marinate bhetki fillet with salt & lemon juice for 1 hour.
- In a bowl mix egg, cornflour, ¼ th of onion paste, black pepper, salt, ½ of the ginger paste, green chilli paste.
- Put oil in a pan.
- Dip the marinated fish into the mixture & deep fry.
- Arrange the fried fish in a plate.
- In the rest of the oil add onion paste, ginger paste, tomato puree, kashmiri red chilli powder, cumin powder, sugar & stir well.
- Add poppy seed paste, Cashew nut paste, raisin paste, salt & stir.
- Add ½ cup hot water.
- Add green chillies & coriander leaves.
- Mix garam masala, nutmeg &mace powder before removing from heat.
- Pour the gravy onto the fish & serve hot.
