Omlette curry is a simple dish of Bengal.It’s easy to prepare and is low on spice.It is best teamed with hot rice.
Ingredients for Omlette Curry
- Eggs – 4
- Onions – 2 large (chopped)
- Tomato – 2 medium (chopped)
- Cumin seeds(jeera) – 1 tsp
- Ginger garlic paste – 1 tbsp
- Potatoes -2 (cubed)
- Turmeric powder – 1 tsp
- Chilli powder – 1 tsp
- Cumin powder – 1 tsp
- Green chillies – 2 (chopped)
- Coriander leaves – for garnishing
- Oil
- Pepper to taste
- Salt to taste
Procedure for preparing Omlette Curry
Beat the eggs and add salt, pepper , a little of the chopped onions and a little quantity of the chopped tomatoes.Make sure you are able to make 4 omlettees. Now in a pan add a bit of oil and make the omlettes.
After the omlettes are done cut them into rectangles of approx.2 inches. Now in a pan heat 2tbsp oil and add cumin seeds and let it splutter. then add the ginger garlic paste and saute for a minute, then add the remaining chopped onions and green chillies and saute till the onions turn pinkish in colour. Now add turmeric powder, chilli powder and cumin powder and saute till you are able to smell the aroma of the cooked masala.
Add the potatoes to this masala and stir for 2 minutes. Then add the remaining tomatoes and blend it well with the masala.Now add salt and water as per the consistency you want and bring it to boil and let the potatoes cook. After the potatoes are cooked and you get the required consistency of the gravy add the omlette pieces and cook for another minute. the omlette curry is ready. While serving garnish it with chopped coriander leaves. Serve it with hot rice or chappatis.
