Aloo Begun Neem bhaja is a famous Eastern India dish which is served hot with rice and is prepared with potatoes, brinjals and neem leaves. and since the neem leaves are bitter it is recommended that it should be eaten as soon as served or it will turn even more bitter. It is very delicious and easily prepared.

Ingredients for Aloo Begun Bhaja with Neem Leaves Recipe
- Potatoes – 2 big(cut in small cubes)
- Begun /brinjal – 1 medium (cut in small cubes)
- Neem leaves – 6-7 leaves
- Salt – to taste
- Turmeric powder – ¼ tsp
- Oil – 4-5 tbsp
Procedure for preparing Aloo Begun Bhaja with Neem Leaves Recipe
Mix turmeric powder and salt with potatoes and brinjal and keep aside.
Heat ½ tsp oil in a pan and fry the neem leaves till they turn crispy and keep them aside.
Now heat the remaining oil and fry the potatoes and brinjal till golden brown and then add the crispy neem leaves and mix well. Serve hot with rice. This needs to be eaten as soon as it is served or else it will become very bitter.
