Prawn Polao is a glorious aromatic Bengali Dish, it’s made in homes on special occasions or to treat guests. It is a combination of rice, king prawn & spices. It’s a must try dish for prawn lovers.
Ingredients for preparing Prawn Polao:
- King Prawn – 2 pieces
- Basmati rice – 250 gm
- Ghee – 100 gm
- Raisin – 50 gm
- Cashew nut – 50 gm
- Bay leaves/Tej Patta/तेज पतà¥à¤¤à¤¾ – 2 pieces
- Whole cardamom – 2 pieces
- Whole cinnamon – 1â€
- Clove – 2 pieces
- Nutmeg powder – 1 tsp
- Mace powder – 1 tsp
- Saffron strands – 4-5 strands (mix in ½ cup of milk)
- Salt – to taste
- Lemon juice – 1 tbsp
- Sugar – 1 tsp
- Ginger paste – 1 tsp
- Onion paste – 1 tbsp
- Red chilli powder – 1 tsp
- Cumin powder – 1 tsp
- Tomato purée – ½ cup
- Garam masala powder : 1 tsp
- Oil – 4 tbsp
- Coconut milk – 1 cup
Procedure for preparing Prawn Polao:
- Soak rice for 1 hour. Strain & keep aside.
- Marinate the prawn with salt & lemon juice.
- Heat oil. Add onion paste. Stir fry.
- Add red chilli powder, turmeric powder, cumin seed powder, sugar, ginger paste, tomato purée & salt. Stir well & cook for 2 minutes.
- Add Prawn, Coconut milk & cover with a lid.
- After 10 minutes sprinkle garam masala powder.
- Remove from heat & keep aside.
- Boil rice till become tender.
- Drain out the water. Mix salt & sugar.
- Heat ghee in a heavy bottom vessel.
- Add bay leaves, whole cardamom, cinnamon, clove. Stir well.
- Add raisin, cashew nut, ginger paste. Stir.
- Add boiled rice. Mix nutmeg & mace powder, Saffron.
- Place the prawn & cover with a lid for 5 minutes in a low heat.
- Serve hot.
