Baked Frittata Recipe

Frittata is an egg based Italian dish which is absolutely easy to make for a quick meal. Being baked it’s healthier than fried food and combines the health benefits of many veggies.Kids and adults will absolutely love this for a quick snack or meal any time of the day.

Ingredients for Baked Frittata Recipe

  • Tomatoes – 4 (de seeded and cubed)
  • Salt  – to taste
  • Sugar – to taste
  • Onion – 1 (sliced fine)
  • Red bell pepper – 1 (chopped)
  • Olive oil – 1 tbsp
  • Bread crumbs – 2 tbsp
  • Eggs – 6 (separate the yolk and the whites)
  • Parmesan cheese – 1 cup (or you can use pizza cheese)
  • Basil leaves – a handful

Procedure for preparing Baked Frittata Recipe

Put the cubed tomatoes along with salt and sugar in a bowl. Set aside for 20 minutes and then drain it (it shouldn’t have any water) .

Blanch onion and bell pepper in salted boiling water. Drain and then pat dry.

Meanwhile pre-heat the oven to 180° C.

Squeeze out the water from the veggies. Beat the egg yolks in mix in the veggies and beat again.

Ad cheese and basil and mix well.

Beat the egg whites till soft peaks are formed and slowly fold on the yolk mix.

Grease a baking plate with olive oil and sprinkle the bread crumbs.

Pour the prepared mix into the baking dish and bake for 35-40 minutes.

Serve warm.
