Aloo Methi is a North Indian dish made of fenugreek leaves and potatoes along with spices. It is a healthy and delicious dish which can be made easily and is generally served hot with rotis.
Ingredients for Aloo Methi Recipe
- Aloo – 5 (medium) boiled and peeled
- Methi/fenugreek leaves – 1 small bunch
- Sugar – 2 tsp
- Turmeric powder – ½ tsp
- Cumin seeds/jeera – 1 tsp
- Dhania powder – 1 tsp
- Onion – 1(chopped)
- Garlic – 5(chopped)
- Ginger – 1 inch (chopped)
- Ghee/clarified butter – 2 tbsp
- Salt – to taste
Procedure for preparing Aloo Methi Recipe
Cube the boiled potatoes and keep aside.
Clean the methi leaves (squeeze out the water) and chop them, mix salt and sugar to it mix well and keep aside.
Now in a pan heat 2 tbsp ghee/ clarified butter and add cumin seeds. Let the cumin seeds splutter and then add chopped onions and sauté for 2 minutes. Now add ginger and garlic, again sauté for 2 minutes. Add turmeric powder and dhania powder and again cook for 2 minutes Now add the methi leaves and cook till dry. Now add the cubed potatoes and mix well . Check seasoning and serve hot with phulkas or rotis.
