Kulfi is a popular frozen dairy dessert of India. It is often described as “traditional Indian ice-cream” Kulfi is mainly made of milk. .Kulfi has similarities to ice cream (as popularly understood) in appearance and taste, but is denser and creamier.It comes in various flavours, including cream (malai), raspberry, rose, mango, cardamom (elaichi), saffron (kesar or zafran), and pistachio (pista).
Ingredients for Kesar Elaichi Kulfi Recipe
- Full cream milk – 500 ml
- Khoya/mawa – 50 gms (grated)
- Green cardamom– 5-6(crushed) only the seeds
- Cornflour – ½ tbsp
- Sugar – 4 tbsp
- Saffron strands – a few
Procedure for preparing Kesar Elaichi Kulfi Recipe
Reduce 400 ml milk to half by boiling in a heavy bottomed pan.
Add sugar to it and mix well.
Meanwhile mix grated khoa/mawa and 1 tbsp of sugar in a bowl and keep aside.
To the remaining 100 ml milk add the cornflour and mix well and then add it to the boiling milk while stirring continuously.
Remove from heat
Add khoya/mawa, saffron and cardamom. Mix well.
Fill it into Kulfi moulds and freeze.
Serve chilled.
