Chemmeen Roast is a Kerala favourite among prawn lovers, it is spiced and roasted in a pan. It’s best served with rotis or parathas.I learnt this recipe from my uncle on my last visit to Kerala. You can make this more spicy or less according to your taste.
Ingredients for preparing Prawn Roast Recipe
- Prawn – 1 kg (de-shelled)
- Onion – 3-4 (sliced)
- Curry leaves – 2 strands
- Green chillies – 3-4 (sliced in halves)
- Coconut pieces – 1 cup
- Pepper powder – 1 tsp
- Chilli powder – 1 tsp
- Turmeric powder – 1 pinch
- Ginger – 1 ” (finely slices)
- Salt – as per taste
Procedure for preparing Prawn Roast Recipe
Boil the prawn with turmeric, ginger, green chillies, salt and the coconut pieces with very less water for 2 minutes.
Heat oil in a pan and sauté onions, curry leaves, little salt, chilli powder and pepper powder on medium flame till it is well roasted for approximately 6-7 minutes.
Now Add the boiled prawn and mix well. again sauté on medium flame till the prawn is well roasted with the masala.
The more you sauté the prawn the tastier the dish will be.
Check seasoning and remove from fie. Serve hot with rice, rotis or parathas.
