Gajar Ka Halwa (Carrot Pudding) Recipe

Gajar ka halwa or Carrot pudding is a very traditional and delicious sweet dish of Punjab. It is healthy and is prepared by red carrots cooked in milk, with sugar,clarified butter and cashews. Cardamom gives it a fantastic flavour. This mouthwatering dish is an all-time favourite sweet dish in India.

Ingredients for Gajar ka Halwa

  • Carrots – 1 kg (grated)
  • Sugar – 2 cups
  • Milk – 500 ml
  • Milkmaid – ¾ tin
  • Green cardamom– 7-8 (grounded)
  • Cashews – 9-10 (halved)
  • Ghee – 4 tbsp

Procedure for preparing Gajar ka Halwa

Bring the milk to boil and then add the grated carrots to it. stirring continuously till the carrots are cooked properly and almost absorbs the entire milk leaving the sides of the pan.

Meanwhile slightly roast the cashews in 1 tbsp Ghee and keep aside.

To this add the sugar and again stirring for 5 minutes. Finally add the milkmaid and remaining ghee and cook till the mix becomes dry and starts changing the colour. Now add the grounded cardamom and continuously stir till the halwa is done.

The halwa is prepared when it changes the colour and becomes slightly slightly brownish. Now you can garnish the halwa with some more cardamom powder and cashews.
