Akoori Recipe

Akoori is a traditional Parsi dish which is basically fluffy scrambled eggs prepared with tomatoes, green chillies and coriander leaves. A very healthy breakfast dish or side dish.

Ingredients for Akoori Recipe

  • Eggs – 6 (beaten)
  • Tomatoes – 2 (chopped)
  • Onions – 3 (chopped)
  • Green chillies – 2 (chopped)
  • Coriander leaves – 3 tbsp (chopped)
  • Mint/Pudina Leaves – 4-5 leaves (chopped)
  • Turmeric Powder – 1 pinch
  • Chilli Powder – 1 tsp
  • Ghee (clarified butter) – 2 tbsp
  • Salt to taste

Procedure for preparing Akoori

Heat ghee in a pan and sauté onions till they turn lightly pinkish in colour, add turmeric and chilli powder.

To this add green chillies, coriander leaves and tomatoes and cook for 2-3 minutes. Remove from heat.

Now add the eggs and stir well. Add salt and return the pan to medium heat while constantly stirring.

Cook the eggs on medium heat till soft and fluffy. Your scrambled eggs are ready and can be served hot with hot pav or crunchy toast.
