Begun bhaja or fried brinjal is a very common dish in Bengali cuisine and is extremely easy to prepare.Bhaja literally means ‘deep-fried’; most vegetables are good candidates but begun (aubergines), kumro (pumpkins), or alu (potatoes) like French fries, or shredded and fried, uchhe, potol are common.

Ingredients for Begun Bhaja Recipe
- Brinjal/aubergine/begun – 1 big
- Turmeric powder – ¼ tsp
- Salt – to taste
- Oil/mustard oil – for deep frying the brinjal
Procedure for preparing Begun Bhaja Recipe
Wash the brinjal and then cut the brinjal in round pieces(it shouldnâ€™t be very thin or very thick).
Rub the brinjal pieces with turmeric and salt .
Heat oil in a pan/kadhai and then deep fry each of the brinjal pieces.
Serve hot with rice, khichdi or even rotis.
