Aloo Sabzi (Potato curry) Recipe

Aloo Sabzi (Potato curry) Recipe

Aloo sabzi or potato curry is generally served with hot rotis, chappatis or puris. It is very easy to make and there various ways to prepare it. the recipe that I have shared is very simple and without much spices but also tastes yummy. My mother used to make this and I used to love it so much that I also used to team it with upma. Whenever I’m in a hurry this recipe doesn’t let me down.

Ingredients for preparing aloo sabzi

  • Potatoes – 6 medium (cubed)
  • Onions – 2 large(chopped)
  • Garlic – 2 -3 flakes(chopped)
  • Ginger – a very small piece (chopped)
  • Green chillies – 1-2 (slit)
  • Cumin (Jeera) seeds (optional) – ½ tsp
  • Green peas – ½ cup
  • Carrot – 1 (chopped)
  • Turmeric powder – 1tsp
  • Salt to taste
  • Oil

Procedure for preparing Aloo sabzi

Heat oil in pan and add cumin seeds till it splutters and then add the garlic. ginger, onions and green chillies and sauté till the onions turn slightly pink. To this add the green peas and carrots and cook till they become tender.

Now add turmeric powder and potatoes and bring to boil. Reduce the flame and let the potatoes cook. In between with a spatula break the potatoes into smaller pieces so as to give the gravy its consistency . Add the required salt and remove from fire. Garnish with coriander leaves.

Aloo sabzi is ready to be served with hot puris, chappatis or rotis.
