Simple Egg Curry Recipe

Egg curry is a dish which can be made very easily and is best served with rotis or chapatis.This recipe is an easy way of making egg curry where you can fry the eggs a little to give it a different taste and texture. Whenever I don’t have much time to prepare dinner I generally go for the egg curry as it is tasty and easy and my family loves it.

Ingredients for Simple Egg Curry Recipe

  • Eggs – 4 (boiled)
  • Potatoes – 2 boiled (cut in four)
  • Onions – 2
  • Green chillies -2 (slit)
  • Ginger – 1 inch
  • Garlic – 5 flakes
  • Turmeric powder – 1 pinch
  • Chillie powder – 1 tsp
  • Coriander powder – 1 tsp
  • Cumin powder – ¼ tsp
  • Tomatoes – 1
  • Bay leaf – 2
  • Garam masala – 1 tsp
  • Coriander leaves – for garnishing
  • Salt – to taste
  • Oil – 4 tbsp

Procedure for preparing Simple Egg Curry Recipe

Remove the shell of  the boiled eggs and then rub a little turmeric and salt on them and keep aside. Now heat 2 tbsp oil in a pan and fry these eggs on low heat till they turn light brown on all sides. (this is optional it is not necessary to fry the eggs, you may use it as boiled itself).

Make a paste of the onions, green chillies, ginger and garlic by grinding it in a mixer.

Heat 2 tbsp oil on a pan and add the bay leaves and then this paste to it. Sauté till the mix turns light brownish.

Now add the turmeric powder, chilli powder, coriander powder and cumin powder and sauté for 2 minutes till the masala is cooked.

Make a puree of the tomato and add the masala and mix well. Let it cook on low flame for 2 minutes.

Now add the potatoes and enough water for the gravy(do not add too much water as the gravy will become very thin). Once the gravy comes to a boil let it cook for 5 minutes till the gravy becomes thick. Now add the garam masala,salt and eggs and mix well.. Check seasoning. Garnish with coriander leaves.

Serve hot with rotis.
