Kesari Recipe

Kesari is a sweet dish commonly made in South India. It is made with sooji/rava/semolina by adding kesar (saffron) to it or ready made kesari colour.It is also known as Suji ka Halwa. It is very rich in taste as the dish also has ghee/clarified butter. It is easy to prepare whenever you have guests at your place.

Ingredients for Kesari Recipe

  • Sooji/rava/semolina– 2 cups
  • Sugar– 2 cups
  • Ghee (Clarified butter) – 3 tbsp
  • Kesar (Saffron) – a few strands (recommended)
  • Kesari powder – 1 tsp ( optional, it gives the bright saffron colour )
  • Boiled water – ½ cup

Procedure for preparing Kesari Recipe

Heat the ghee in a pan and add rava/sooji to it and roast the rava till the colour of rava changes slightly.

Now add the boiled water to it and let the rava cook. Once the rava is cooked add sugar, and kesari powder or kesar (saffron) to it. mix well till the mix becomes smooth.

Kesari is ready to be served now.

Note – Instead of kesari powder it is best to use few strands of kesar as this gives it a natural colour (does not give the bright colour, if not available use kesari powder) and is good for kids as well.
