Kheer Patisapta Recipe

Kheer Patisapta is a delicious, mouth watering, Bengali traditional sweet dish. It is offered on pious sankranti specially.

Ingredients for preparing Kheer patisapta:

For pancake:

  • Rice – 250 gm (gobindobhog)
  • Semolina – 50 gm
  • Sodium bi carbonate – 1 pinch
  • Ghee – 100 gm
  • Clove – 20 pieces

For filling:

  • Coconut – 1 piece (grated)
  • Khoya kheer – 200 gm
  • Sugar – 250 gm

For sweet water:

  • Sugar – 250 gm
  • Water – 200 ml

Procedure for preparing Kheer patisapta:

  • Soak rice for 2 hours.
  • Drain water & grind to make powder.
  • Make a thick batter of powdered rice, sodium bi carbonate, salt & water.
  • Rice mixture is ready.
  • Put coconut & sugar in a pan & stir continuously on a low flame.
  • When it will be a semi dry mixture, add 150 gm of the khoya kheer & remove from heat.
  • Filling is ready.
  • Now to make pancake, spread 1 tsp of ghee.
  • Pour 3 tbsp of the rice mixture & spread using back of the spoon.
  • Arrange 2 tsp of filling into the pancake & fold carefully & seal it with a clove.
  • Patisapta is ready.
  • Now to make sweet water, put sugar & water in a pan & boil until it thickens.
  • Remove from the heat & dip the patisapta into it for 4 minutes.
  • Arrange patisapta on a plate & spread the remaining khoya kheer over it & serve.
